Macaroni in Spanish style

Bilbao macaroni are sweet dessert biscuits that are mainly enjoyed on the day of Saint Saint Blaise. They are usually eaten with marshmallows.

According to legend, biscuits have a health benefit: if eaten for nine days in one tube, holding a Saint Blaise ribbon around their neck, the saint protects a person’s throat from disease throughout the winter.

Bilbao macaroni is made from egg whites, cinnamon, chopped almonds and sugar. As we have already mentioned, the result is different from that of the French biscuits of the same name – in fact, very different. At the same time, we give instructions for these more typical, French macarones. You can prepare both and find out your favorites!

Ingredients

  • 150 g chopped almonds
  • 4 tablespoons sugar
  • 120 g icing sugar
  • 3 egg whites
  • 0.5 tablespoons cinnamon powder
  • 0.5 tablespoons lemon juice
  • 1 tablespoon butter (for baking paper)
  • 1 tablespoon wheat flour (for baking paper)

Manufacturing

  • In a medium bowl, mix the ground almonds, sugars and cinnamon.
  • Slowly add the egg whites and lemon juice, and stir with an electric mixer. Make sure the mixture is sticky and solid.
  • Take baking paper and spread a little butter and flour on it to keep the macarons from sticking.
  • Make dough into small balls.
  • Put the sugar on a plate and lightly press each biscuit into the sugar. Make sure the biscuits are not too large to fit on baking paper.
  • Before you put the baking paper in the oven, flatten the balls a little – they will rise as they bake.
  • Bake the biscuits for 10 minutes at 180 ° C until they rise and turn golden brown.
  • Take the biscuits out of the oven and let them cool. Serve with coffee or tea.

French macaroni

These well-known colorful pastries also contain egg white, icing sugar and ground almonds.  So they’re kind of similar to Bilbao macarons, but the difference is that French macaron biscuits have a filling.

Ingredients for macaroni

  • 4 egg whites
  • 240 g of fine sugar
  • 225 g ground almonds
  • A little salt
  • 2 drops of food coloring

Ingredients for the filling

  • 240 g icing sugar
  • 200 g butter
  • 1 tablespoon vanilla extract
  • 2 tablespoons whipped cream
  • 1 tablespoon grated lemon zest
  • 1 tablespoon cocoa powder

Manufacturing

  • Beat the egg whites, salt and icing sugar in a bowl into a solid mixture that forms “peaks”.
  • Add ground almonds and food coloring.
  • Cover the sheet with baking paper and place the flattened dough balls on it so that there is enough space between the biscuits to prevent them from getting stuck.
  • Then place the biscuits in the oven at 200 ° C for ten minutes. Take them out of the oven and allow to cool while you prepare the filling.

Preparation of the filling

  • Whisk the butter until it becomes creamy in texture, and add icing sugar, vanilla and whipped cream.
  • Include grated lemon zest and cocoa powder.
  • Finally, fill the macaroni with a thin layer of the mixture between the two cookies – and enjoy!
